INSTRUCTION: Answer ALL questions.

1. Define an enzyme and state one reason why enzymes are essential in living cells. 2. State three characteristics of enzymes, referring to optimum temperature, optimum pH and specificity. 3. Explain what is meant by enzyme specificity. Give one clear example. 4. Describe how temperature affects the rate of an enzyme-catalysed reaction, mentioning optimum temperature and denaturation. 5. Design a simple practical to demonstrate the effect of pH on enzyme action. List materials and numbered steps. 6. Predict and explain what happens to enzyme activity when the temperature is (a) below optimum, (b) at optimum and (c) above optimum. 7. State two industrial applications of enzymes and explain briefly how enzymes improve one of these processes. 8. Explain how enzymes in biological washing powder remove stains from clothes. Refer to the type of substance broken down. 9. Describe the procedure for testing a food sample for reducing sugars using Benedict’s reagent. Include the expected result for a positive test. 10. Describe the test for starch in a food sample using iodine solution and give the expected colour change. 11. Describe the test for proteins using Biuret reagent and state the positive result. Also state one simple test for fats or oils. 12. Identify three good dietary sources of: (a) carbohydrates, (b) proteins and (c) lipids. 13. Describe the importance of carbohydrates, proteins and lipids to the human body. Provide one function for each. 14. Explain the roles of water, vitamins and mineral salts in maintaining body health. Give one example for each. 15. Identify the main causes and two visible signs of: (a) kwashiorkor and (b) marasmus. 16. State the deficiency, one symptom and one preventive measure for each of: (a) goitre, (b) scurvy and (c) rickets. 17. Design a one-day balanced diet for a pregnant woman. List meals and explain two reasons why this diet meets pregnancy needs. 18. Design a one-day balanced diet for a sportsman. Include portion emphasis and explain two dietary features that support athletic performance. 19. List the macro plant nutrients and the micro plant nutrients named in the syllabus. Give one function of any two of these nutrients. 20. Describe the deficiency symptoms chlorosis, stunted growth and leaf flecking, and suggest one likely nutrient deficiency for each symptom.
